A healthy take on wild rice pilaf. A nice side dish for any meal, especially during the holidays!

Ingredients
  1. 2 Tablespoons olive oil
  2. 1 Cup wild and brown rice mix
  3. 1 chopped onion
  4. ½ cup finely chopped carrot
  5. 1 ½ cups vegetable broth
  6. 1 cup water
  7. ¼ cup fresh parsley, chopped
  8. Salt & pepper to taste
Instructions
  1. 1. Start by sautéing the onion in olive oil until they begin to brown.
  2. 2. Stir in rice mix and carrots. Sauté for a few more minutes.
  3. 3. Add in the broth and water; bring to a boil.
  4. 4. Cover and lower heat to a simmer.
  5. 5. Cook for about 45 minutes, your rice should be tender
  6. 6. With a fork, mix in fresh parsley, salt and pepper.
