A healthy take on wild rice pilaf. A nice side dish for any meal, especially during the holidays!

Ingredients
- 2 Tablespoons olive oil
- 1 Cup wild and brown rice mix
- 1 chopped onion
- ½ cup finely chopped carrot
- 1 ½ cups vegetable broth
- 1 cup water
- ¼ cup fresh parsley, chopped
- Salt & pepper to taste
Instructions
- 1. Start by sautéing the onion in olive oil until they begin to brown.
- 2. Stir in rice mix and carrots. Sauté for a few more minutes.
- 3. Add in the broth and water; bring to a boil.
- 4. Cover and lower heat to a simmer.
- 5. Cook for about 45 minutes, your rice should be tender
- 6. With a fork, mix in fresh parsley, salt and pepper.
